Middle Eastern Bulgur Salad

1/2 cup plain yogurt

1/2 cup chopped cucumber

1/2 teaspoon chopped fresh dill weed  


1 cup cooked bulgur

1/4 cup hummus

2 tablespoons chopped fresh parsley

1 tablespoon chopped green onion

1/2 teaspoon finely chopped fresh garlic

1/4 teaspoon chopped fresh dill weed  

1/8 teaspoon salt

1 tablespoon Land O Lakes® Butter

2 lettuce leaves

1/4 cup chopped tomato

 *Substitute 1/4 teaspoon dried dill weed. **Substitute 1/8 teaspoon dried dill weed.

How to make

  1. STEP 1

    Combine all sauce ingredients in small bowl.

  2. STEP 2

    Combine all salad ingredients except butter, lettuce and tomato in medium bowl; mix well.

  3. STEP 3

    Melt butter in 10-inch skillet until sizzling; add bulgur mixture. Cook over medium heat, stirring occasionally, 3-5 minutes or until lightly browned.

  4. STEP 4

    For each serving, place lettuce leaves onto individual serving plates. Top each with half of bulgur mixture. Sprinkle each with half of tomatoes; top with half of yogurt sauce.
