3 tablespoons Land O Lakes® Butter

1 tablespoon finely chopped fresh garlic

1 (10-ounce) prepared thin pizza crust

1 small (1/2 cup) onion, chopped

1/3 cup chopped sun-dried tomatoes

8 large Land O Lakes® Eggs

3/4 teaspoon salt

2 cups chopped fresh spinach leaves

1 cup shredded mozzarella cheese

How to make

  1. STEP 1

    Heat oven to 425ºF.

  2. STEP 2

    Melt butter in 10-inch skillet over medium-high heat until sizzling. Add garlic; stir. Brush pizza crust with some of the garlic butter mixture. Bake 6-7 minutes or until top is golden brown.

  3. STEP 3

    Add onion and sun-dried tomatoes to same skillet; cook 2-3 minutes or until softened.

  4. STEP 4

    Whisk eggs and salt together in another bowl.

  5. STEP 5

    Reduce skillet heat to medium. Pour egg mixture into skillet. Cook, stirring gently, 3-4 minutes or until eggs are just set but still moist. Remove from heat. Add spinach; cook until leaves are just wilted.

  6. STEP 6

    Sprinkle 1/3 cup cheese evenly over prepared crust. Spread egg mixture over cheese. Top with remaining shredded cheese. Bake 4-6 minutes or until cheese is melted.

Tip #1

If sun-dried tomatoes are packed in oil, drain and blot dry on a paper towel before chopping.
