Jack-O-Lantern Pancakes

1 cup all-purpose flour

2 tablespoons firmly packed brown sugar

2 teaspoons baking powder

1 1/2 teaspoons pumpkin pie spice  

1/4 teaspoon salt

1 cup milk

1/2 cup canned pumpkin

1 large Land O Lakes® Egg

2 tablespoons Land O Lakes® Butter, melted


Chocolate chips, if desired

Land O Lakes® Butter with Canola Oil

Maple syrup

 *Substitute 3/4 teaspoon ground cinnamon, 1/4 teaspoon ground ginger and 1/8 teaspoon each ground cloves and nutmeg.

How to make

  1. STEP 1

    Combine flour, brown sugar, baking powder, pumpkin pie spice and salt in bowl. Set aside.

  2. STEP 2

    Combine milk, pumpkin, egg and melted butter in another bowl; mix well. Pour milk mixture into flour mixture; mix well.

  3. STEP 3

    Heat griddle to 350ºF or until drops of water sizzle.

  4. STEP 4

    Spoon 1/4 cup batter onto griddle for each pancake; spread with back of spoon to 4-inch circle. Use spoon to swirl batter to form pumpkin stem.

  5. STEP 5

    Cook 2-4 minutes or until bubbles form. Turn; continue cooking 2-3 minutes or until lightly browned and cooked through.

  6. STEP 6

    Place chocolate chips onto warm pancakes to form jack-o’-lantern face, if desired. Serve with Butter with Canola Oil and syrup.
