Pistachio Cream Sandwich Cookies

3/4 cup Land O Lakes® Butter, softened

3/4 cup powdered sugar

1 large Land O Lakes® Egg

1 1/2 cups all-purpose flour

1/4 teaspoon salt

1/2 cup finely chopped pistachio nuts


1 1/4 cups powdered sugar

1/4 cup Land O Lakes® Butter, softened

1/2 teaspoon vanilla

2 to 4 teaspoons Land O Lakes® Fat Free Half & Half

2 tablespoons finely chopped pistachio nuts



How to make

  1. STEP 1

    Combine 3/4 cup butter and 3/4 cup powdered sugar in bowl. Beat on medium speed, scraping bowl often, until well mixed. Add egg; continue beating until combined. Add flour and salt; beat on low speed until well mixed. Wrap in plastic food wrap. Refrigerate at least 1 hour or until firm.

  2. STEP 2

    Heat oven to 350°F.

    Place 1/2 cup chopped pistachio nuts in bowl. Shape dough into 1/2-inch balls. Roll each in pistachio nuts. Place 1 inch apart onto ungreased cookie sheets. Flatten each cookie with bottom of glass dipped in sugar.

  4. STEP 4

    Bake 7-8 minutes or until edges are lightly browned. Transfer to cooling rack. Cool completely.

  5. STEP 5

    Combine 1 1/4 cups powdered sugar, 1/4 cup butter, vanilla and enough half & half for desired spreading consistency in bowl. Stir in 2 tablespoons chopped pistachio nuts.

  6. STEP 6

    Spread bottom-side of 1 cookie with 1 teaspoon filling; top with another cookie, bottom-side down. Repeat with remaining cookies.
