Potato Patties with Black Bean & Mango Salsa

1/2 cup chopped red onion

1 (15-ounce) can black beans, rinsed, drained

3 green onions, sliced

2 Roma tomatoes, seeded, chopped

1 mango, peeled, chopped

1 tablespoon chopped fresh cilantro

1 tablespoon chopped fresh mint leaves

2 tablespoons lime juice

1 teaspoon finely chopped fresh garlic

1/2 teaspoon salt


1 (32-ounce) bag (16 patties) frozen potato tri-patties

1 cup light sour cream

How to make

  1. STEP 1

    Combine all salsa ingredients in bowl; set aside.

  2. STEP 2

    Bake potatoes according to package directions. Serve 1/2 cup salsa over 2 baked patties; top with 2 tablespoons sour cream.

Tip #1

Salsa can be served over baked potatoes.
