Provolone Garbanzo Bean Salad

3 tablespoons rice vinegar

2 tablespoons lemon juice

2 teaspoons finely chopped fresh garlic

2 teaspoons olive oil

1/4 teaspoon salt

1 cup cherry tomatoes, cut in half

1/2 cup chopped green bell pepper

1/2 cup thinly sliced red onion

1 (15-ounce) can garbanzo beans, rinsed, drained

1 (6-ounce) slice Land O Lakes® Provolone Cheese, cubed 1/2 inch

2 tablespoons chopped fresh parsley

How to make

  1. STEP 1

    Beat vinegar, lemon juice, garlic, olive oil and salt in bowl with whisk. Add all remaining ingredients; toss to coat.

  2. STEP 2

    Cover; refrigerate at least 1 hour to allow flavors to blend.
