Ravioli Beef & Zucchini

1 (9-ounce) package (3 cups) refrigerated fresh cheese ravioli

Beef & Zucchini

1 teaspoon olive or vegetable oil

1 pound lean ground beef

1 medium (1/2 cup) onion, chopped

1 teaspoon purchased minced garlic

1 (14 1/2-ounce) can diced tomatoes with Italian herbs

2 medium (2 cups) zucchini, cut into 1/2-inch cubes

1 teaspoon dried oregano leaves  

1/2 teaspoon salt

1/4 teaspoon pepper

1 cup shredded mozzarella cheese

 *Substitute 1 tablespoon chopped fresh oregano leaves.

How to make

  1. STEP 1

    Cook ravioli according to package directions. Rinse. Drain.

  2. STEP 2

    Meanwhile, heat oil in 10-inch skillet; stir in ground beef, onion and garlic. Cook over medium-high heat, stirring constantly, 5-7 minutes or until ground beef is browned. Drain off fat.

  3. STEP 3

    Stir in cooked ravioli and all remaining ingredients except cheese. Continue cooking, stirring occasionally, 4-5 minutes or until zucchini is crisply tender. Stir in cheese. Continue cooking 1-2 minutes or until cheese is melted.
