1 tablespoon Land O Lakes® Butter

1 pound turkey tenderloin, cubed 3/4-inch

1 1/2 teaspoons finely chopped fresh garlic

1/2 cup chicken broth

1 (8-ounce) package sliced fresh mushrooms

5 green onions, cut into 1-inch pieces

4 Roma tomatoes, halved lengthwise, sliced crosswise

Salt, if desired

Pepper, if desired

3 cups hot cooked rice

How to make

  1. STEP 1

    Melt butter in 12-inch nonstick skillet until sizzling; add turkey and garlic. Cook over medium-high heat, stirring occasionally, 8-10 minutes or until turkey is lightly browned and no longer pink. Remove turkey from skillet; keep warm.

  2. STEP 2

    Add broth and mushrooms to same skillet. Cover; continue cooking, stirring occasionally, for 5 minutes.

  3. STEP 3

    Add turkey, green onions, and tomatoes. Continue cooking 1-2 minutes or until heated through. Season with salt and pepper, if desired. Serve with hot cooked rice.
