Seafood Quesadillas

4 ounces frozen cooked salad shrimp, thawed

8 ounces cooked crabmeat, flaked

3/4 teaspoon Old Bay seasoning

1/4 cup finely chopped red bell pepper

1/4 cup finely chopped green bell pepper

2 cups shredded Monterey Jack cheese

2 tablespoons Land O Lakes® Butter, softened

8 (8-inch) flour tortillas

How to make

  1. STEP 1

    Heat griddle or 10-inch skillet over medium heat.

  2. STEP 2

    Combine shrimp, crabmeat, Old Bay seasoning, red bell pepper, green bell pepper and Monterey Jack cheese in bowl; mix well.

  3. STEP 3

    Spread 1 side of each tortilla with butter. Top unbuttered side of tortillas evenly with seafood mixture, placing onto one-half of tortilla. Fold tortillas in half over filling; press together.

  4. STEP 4

    Place tortillas into skillet; cook 5-7 minutes, turning once, or until cheese is melted and quesadillas are golden brown.

    Cut each quesadilla into thirds; serve immediately.
