Spicy Salsa Verde & Juniper Berry Marinade

Ingredients
1 (12-ounce) jar (1 1
2 cups) prepared salsa verde1
3 cup chopped fresh parsley1
3 cup dry white wine or chicken broth1 teaspoon juniper berries, crushed

4 teaspoon coarse ground pepper1 teaspoon freshly grated lemon zest
How to make

STEP 1
Combine all ingredients in bowl; mix well.

Use to marinate 2 pounds meat (chicken, pork or beef); reserve marinade. Cook meat as desired.

Pour reserved marinade into 1-quart saucepan; cook over medium-high heat until mixture comes to a full boil. Serve with cooked meat.

Juniper berries are a bitter blue blackberry native to America. They are sold dried and used as a flavoring. Look for them in the spice section of the supermarket.
