Slow Cooker Beef Short Ribs

1/4 cup Land O Lakes® Butter with Olive Oil & Sea Salt

4 pounds bone-in beef short ribs, cut into 2-inch pieces

2 large (2 cups) onions, cut into 1-inch pieces

2 ribs (1 cup) celery, cut into 1-inch pieces

2 medium (1 cup) carrots, cut into 1/2-inch pieces

3 garlic cloves, sliced

4 cups low-sodium beef broth

1 (15-ounce) can crushed tomatoes

4 fresh thyme sprigs

How to make

  1. STEP 1

    Melt Butter with Olive Oil & Sea Salt in 12-inch skillet over medium-high heat; add short ribs. Cook 12-15 minutes or until browned on both sides. Place short ribs into slow cooker.

  2. STEP 2

    Place onions, celery and carrots into same skillet. Cook, stirring occasionally, 7-10 minutes or until softened; add garlic. Cook 1 minute.

  3. STEP 3

    Add 1 cup beef broth; cook, stirring constantly, 5-7 minutes or until liquid is reduced by half.

  4. STEP 4

    Add remaining beef broth, crushed tomatoes and thyme; cook 3-4 minutes or until mixture comes to a boil. Pour vegetable mixture over short ribs. Cover; cook on High heat 6 hours or Low heat 8 hours, or until beef is fork tender.
