QI love pretty icing on my cookies. What is the best type of icing to use? I'd like something that doesn't get hard and break off when you bite into it.

Nothing transforms a delicate butter cookie into a sensation like icing. Adding that little bit of color and creaminess can be done with a thin glossy glaze or a rich frosting. Buttercream frosting is the ultimate, of course, with its light, silky texture and ease of spreadability.

The three classic recipes below — including our chocolate glaze-dipped Be My Valentine Cookies, our buttercream frosted Best Ever Butter Cookies or our playful Springtime Butter Cookies — will let you experiment with some delicious adornments on some fabulous cookies.

After the frosting firms up a bit, your cookie creations can be layered with waxed paper in a loosely covered container and stored on your countertop for a week or two. But be careful — frosted cookies have been known to disappear at a moment's notice.
