Cauliflower -- The New and Improved Kale
Raise your hand if aren’t a big fan of kale! (My hand is in the air if anyone was curious.) Kale is one of those vegetables I just couldn’t get behind even when it seemed to be on every restaurant menu, appearing in side dishes, appetizers, main entrees, salads, smoothies…I’d go on, but I think you all understand. So, I was delighted when I heard that kale is “out” and cauliflower is “in!”

Why is cauliflower so magical? One word: versatility. While kale has a very distinct flavor profile, cauliflower is like a nutrition-packed blank canvas, just waiting for your kitchen creativity to transform it into something delicious. We’ve been embracing cauliflower here in the Test Kitchen, and we’ve come up with a variety of ways to prepare it:
As a Steak – Grilled Cauliflower Steak with Cheese
Grilled – Italian Grilled Cauliflower Packets
Soup – Roasted Cauliflower and Fennel Soup
Mashed “Potatoes”- Herbed Mashed Cauliflower
Roasted – Roasted Cauliflower
Steamed and smothered in browned butter – Cauliflower with Golden Nutmeg Butter
Cauliflower is one trend I’m hoping is here to stay!
