Maple Caramel Corn

16 cups plain popped popcorn

1 cup firmly packed brown sugar

1/2 cup Land O Lakes® Maple Brown Sugar Butter Spread

1/4 cup light corn syrup

1/2 teaspoon salt

2 teaspoons vanilla extract

1/2 teaspoon baking soda

How to make

  1. STEP 1

    Heat oven to 200°F.

  2. STEP 2

    Place popcorn into large roasting pan; set aside.

  3. STEP 3

    Combine brown sugar, Maple Brown Sugar Butter Spread, corn syrup and salt in 3-quart saucepan. Cook over medium heat, stirring occasionally, 8-10 minutes or until mixture comes to a full boil. Continue cooking, stirring occasionally, 5 minutes.

  4. STEP 4

    Remove from heat; stir in vanilla and baking soda. Carefully pour hot syrup mixture over popcorn in pan; stir until well coated.

  5. STEP 5

    Bake, stirring every 15 minutes, 1 hour or until caramel corn is crisp. Immediately place caramel corn onto waxed paper. Cool completely. Break into bite-sized pieces. Store in tightly covered container.
