Ingredients
1 cup all-purpose flour

4 teaspoon garlic salt1
4 teaspoon ground red pepper (cayenne)1 cup water

STEP 1
Heat oven to 400°F. Line 2 large baking sheets with parchment paper.

Whisk together flour, garlic salt and cayenne; set aside.

Bring water and butter to a boil in medium saucepan. Add flour mixture; stir constantly until dough forms a ball. Cook, stirring frequently, 2 minutes. Transfer dough to large bowl. Add eggs, 1 at a time, beating well after each addition. Add cheese; beat until well combined.

Scoop dough by tablespoonfuls onto prepared baking sheets. Bake 16-18 minutes or until golden brown and almost doubled in size.
Tip #1
Gougère batter can be shaped and refrigerated up to a day before serving. When ready to bake, add 2-3 minutes to bake time.
Tip #2
Add your favorite chopped fresh herbs to the dough mixture. One tablespoon dill or thyme and up to 2 tablespoons minced chives boosts color and flavor.

These gougères can be split open and filled with your favorite dip or spread for an elegant cocktail-sized sandwich.
Tip #4
These appetizers are best eaten warm, but may be made ahead, baked and frozen up to 3 months. Reheat in a 250°F oven 10 minutes or until warm and crispy.
