Cajun Macaroni Salad

16 ounces uncooked dried elbow macaroni

1 tablespoon extra-virgin olive oil

1 1/2 cups mayonnaise

3 tablespoons spicy brown mustard

3 tablespoons red wine vinegar

2 tablespoons Cajun seasoning

2 teaspoons smoked paprika

1 teaspoon salt

1 teaspoon pepper

4 ribs celery, sliced

1/2 medium (1/2 cup) white onion, chopped


4 large Land O Lakes® Eggs, hard-cooked, peeled, sliced

Chopped fresh parsley

How to make

  1. STEP 1

    Bring 4 quarts water to a boil in large saucepan; add macaroni. Boil 10 minutes or until macaroni is tender; drain. Toss macaroni with oil to coat in serving bowl.

  2. STEP 2

    Meanwhile, combine mayonnaise, mustard, red wine vinegar, Cajun seasoning, smoked paprika, salt and pepper in medium bowl; mix well.

  3. STEP 3

    Pour dressing over macaroni in bowl. Add celery and onion; mix well. Top with hard-cooked eggs, additional smoked paprika and chopped parsley.

  4. STEP 4

    Refrigerate 30 minutes before serving.
