Peanut Butter Cup Brownie Bites

Ingredients

1/2 cup Land O Lakes® Butter

2/3 cup semi-sweet chocolate chips

1 cup sugar

2 large Land O Lakes® Eggs

1 teaspoon vanilla extract

1/4 teaspoon salt

2 tablespoons milk

1/2 cup unsweetened cocoa

1/4 cup all-purpose flour

1 cup mini chocolate chips

 

40 (12 ounces) miniature peanut butter cup candies, unwrapped

Nonpareil sprinkles

How to make

  1. STEP 1

    Heat oven to 350°F. Place mini paper baking cups into 40 mini-muffin cups. Spray baking cups with nonstick cooking spray.

  2. STEP 2

    Melt butter in 3-quart saucepan over medium heat. Add 2/3 cup chocolate chips, whisking until well combined. Whisk in sugar. Remove pan from heat. Whisk in eggs and vanilla, then salt, then milk, then cocoa, then flour until completely incorporated. Whisk vigorously 30 seconds. Stir in miniature chocolate chips.

  3. STEP 3

    Using 1-tablespoon (#60) scoop, drop leveled scoops brownie batter into muffin cups. Bake 10 minutes if using nonstick pan or 11 minutes if using shiny aluminum pan or until brownie bites have risen slightly and tops are shiny and crackly.

  4. STEP 4

    Remove brownie bites from oven; immediately press peanut butter cup into center of each brownie bite. When chocolate on tops of peanut butter cups has melted, sprinkle each brownie bite with nonpareils.

  5. STEP 5

    Cool brownie bites in pan at least 10 minutes before removing to wire rack. Store cooled brownie bites in covered container at room temperature or in freezer.

Tip #1

Let the brownie batter sit at room temperature 15-30 minutes after mixing to make scooping the batter easier.

Tip #2

Avoid over-sprinkling the nonpareils by placing a sticker or piece of tape over all but one of the openings in the sprinkle jar lid. Then tap the jar lightly to sprinkle the nonpareils.
