Italian Chicken Panini
A sprinkle of Italian seasoning and slices of creamy Italian Blend bring the flavors of Italy to a popular spin on the grilled cheese sandwich. Perfect when you have leftover rotisserie chicken.

1/4 cup Land O Lakes® Butter, softened
4 slices Italian peasant bread
2 tablespoons mayonnaise
1 teaspoon Italian seasoning
8 (3/4-ounce) slices Land O Lakes® Italian Blend
6 ounces rotisserie chicken breast, skin removed, sliced 1/2 inch thick
8 ounces heirloom tomato, thinly sliced
1 cup arugula leaves
How to make
Spread 1 tablespoon butter on one side of each slice bread. Turn 2 slices over; spread each with 1 tablespoon mayonnaise. Sprinkle mayonnaise with 1/2 teaspoon Italian seasoning. Top each slice seasoned bread with 2 slices cheese; divide chicken evenly between sandwiches. Layer half of tomato slices over each sandwich; top each with half of arugula, 2 slices cheese and remaining slice bread, butter-side up.
Place sandwich onto panini press; grill until bread is toasted and cheese is melted. Repeat with remaining sandwich.
If desired, a grill-style pan may be used instead of a panini press: Place sandwich into heated grill pan. Place a piece of parchment on top of sandwich, then use a heavy saucepan to press firmly down on sandwich. Cook over medium heat 3 minutes; turn sandwich over and cook 2-3 minutes or until bread is golden brown and cheese is melted.
