Cheesy BBQ Meatloaf

Ingredients

3/4 cup panko bread crumbs

1 small (1/2 cup) onion, grated

1 large Land O Lakes® Egg

1/2 cup plus 2 tablespoons barbecue sauce, divided

2 tablespoons chopped fresh parsley

2 teaspoons kosher salt

1 teaspoon garlic powder

1/2 teaspoon pepper

1 pound ground beef

1 (8-ounce) bag Land O Lakes® Sharp White & Medium Cheddar Cheese Cubes

 

Crispy fried onions, as desired for garnish

How to make

  1. STEP 1

    Heat oven to 375°F. Line baking sheet with parchment paper.

  2. STEP 2

    Place panko into large bowl. Add onion and any juices, egg, 2 tablespoons barbecue sauce, parsley, salt, garlic powder and pepper; mix well. Add ground beef, using clean hands to gently combine. Mix in cheese cubes.

  3. STEP 3

    Form ground beef mixture into 7x4x2-inch loaf on prepared baking sheet, tucking in any visible cheese cubes. Spread 1/4 cup barbecue sauce over entire loaf. Bake 45-55 minutes or until internal temperature of meatloaf reaches 165°F.

  4. STEP 4

    Adjust oven to broil. Spread remaining 1/4 cup barbecue sauce over top. Broil 2-3 minutes or until bubbly and lightly browned. Cool 10 minutes before slicing. Garnish with crispy fried onions. Serve with additional barbecue sauce on the side, if desired.
