Ingredients
2 pounds russet potatoes, peeled, diced 1 inch
1 Half Stick (1/4 cup) Land O Lakes® Butter, softened

3 cup sliced green onions2 teaspoons finely chopped fresh garlic
4 ounces cream cheese, softened
2 ounces (1 Land O Lakes® Sharp Yellow Cheddar Cheese Chunk, shredded

4 cup milk or heavy whipping cream1
4 cup sour cream1 teaspoon kosher salt

STEP 1
Cook potatoes in salted boiling water in large saucepan 10 minutes or until fork-tender; drain.

Add butter, green onions and garlic to warm saucepan; stir to combine. Add potatoes, cream cheese, shredded cheese, milk, sour cream, salt and pepper. Using electric hand mixer or potato masher, mix until just smooth. Transfer potatoes to serving dish; top with additional shredded cheese and sliced green onions, if desired.
Tip #1
For creamier potatoes, stir in additional milk or cream, a few tablespoons at a time, until desired consistency. (This also works well for reheating.)
Tip #2
To make a day ahead, prepare the recipe without cheese. When ready to serve, reheat in the microwave, stirring in cheese after the potatoes are hot.
