4 teaspoon salt1 cup cold Land O Lakes® Butter, cut into chunks
1 cup granulated sugar
1 1
2 teaspoons vanilla extract1
2 teaspoon almond extract
Sanding sugar, as desired
Brightly colored hard candies, separated by color, smashed to pebble-sized pieces
How to make
-
STEP 1
Heat oven to 350°F. Line cookie sheets with parchment paper.
-
STEP 2
Combine flour, baking powder and salt in bowl; set aside.
-
STEP 3
Place butter and granulated sugar into bowl of heavy-duty stand mixer fitted with paddle attachment. Beat at medium speed until well combined. Add egg, vanilla and almond extract; beat until well mixed. Gradually add flour mixture, beating at low speed until just combined.
-
STEP 4
Roll out dough on lightly floured surface to 1/8-inch thickness. Cut into shapes with desired cookie cutter. Place onto prepared cookie sheets. If desired, lightly brush cookies, a few at a time, with water then sprinkle generously with sanding sugar. Using 1-inch (or smaller) cookie cutters, cut shape inside each cookie; carefully remove dough cut-out. Fill cut-outs with crushed candy, using one or more colors.
-
STEP 5
Bake 8-10 minutes or until cookies are just beginning to color around edges. Cool completely before removing from cookie sheet.
Tip #1
Use a toothpick to move candy into tight corners.
Tip #2
To break up candy, place into a heavy-duty plastic food bag and smash with a rolling pin.
Tip #3
Don't have small cookie cutters? Use a paring knife to carefully cut out shapes.
Tip #4
Make the cutest tiny cookies with the leftover cut-out shapes. Bake just 6-7 minutes or until just beginning to color around the edges.
