Ingredients

4 large (12 to 13 ounces each) baking potatoes

2 teaspoons olive oil

2 teaspoons kosher salt, divided

1/2 cup Land O Lakes® Garlic & Herb Butter Spread

1 (8-ounce) package (2 cups) Land O Lakes® Co-Jack® Cheese Chunk, shredded

1 cup sour cream

Sliced green onions, as desired

How to make

  1. STEP 1

    Heat oven to 425°F.

  2. STEP 2

    Prick potatoes with fork, then rub each with 1/2 teaspoon olive oil. Season each with 1/4 teaspoon salt. Place potatoes directly onto oven rack; bake 50-60 minutes or until skin is crisp and potato "gives" if squeezed gently and knife inserted slides in easily. Place on oven-safe plate; let rest 5 minutes.

  3. STEP 3

    Split each baked potato open in X shape. Use fork to fluff insides before seasoning each with 1/4 teaspoon salt. Fill each with 2 tablespoons Garlic & Herb Butter Spread, then 1/2 cup cheese. Return to oven 2-3 minutes or until cheese is melted. Finish each with 1/4 cup sour cream and sliced green onions, as desired.

Tip #1

Make it a meal—add leftover chili or taco-seasoned meat before adding cheese and sour cream.
