Strawberry Buckle
Dense, buttery and bursting with fresh strawberries, this warm buckle is a spring or summer treat worth the oven time. Just add whipped cream or ice cream!

Ingredients
12 cup Land O Lakes® Butter
1 cup (120 grams) all-purpose flour
1 cup granulated sugar
1 teaspoon baking powder
1 teaspoon kosher salt
12 teaspoon ground cinnamon
1 cup buttermilk
1 12 cups fresh strawberries, cut into bite-sized pieces
Sanding sugar, as desired for topping
Ice cream or whipped cream, as desired
How to make

STEP 1
Heat oven to 375°F. Place butter into 8-inch square baking pan; melt in oven 5 minutes. Remove from oven; set aside.

Stir together flour, granulated sugar, baking powder, salt and cinnamon in bowl. Stir in buttermilk until well combined. Pour batter into pan with melted butter; stir gently until mostly combined. (It is okay if some streaks of butter remain.) Sprinkle strawberries evenly over batter. Sprinkle generously with sanding sugar.

STEP 3
Bake 45 minutes or until deep golden brown and toothpick inserted in center comes out clean. Cool at least 10 minutes. Serve warm with ice cream or whipped cream, if desired.
Tip #1
If you’re out of buttermilk, make a quick substitute by stirring 1 tablespoon lemon juice or white vinegar into enough milk to make 1 cup. Let stand 5 minutes to thicken before using.
