Ingredients

2 medium (about 1 pound) zucchini

1 teaspoon kosher salt

1/2 teaspoon freshly grated lemon zest

1 tablespoon fresh lemon juice

1/2 teaspoon finely grated fresh garlic

3 tablespoons Land O Lakes® Extra Creamy Butter

How to make

  1. STEP 1

    Grate zucchini on large holes of box grater directly into colander; stir in salt. Let stand 20 minutes. Squeeze out as much liquid as possible.

  2. STEP 2

    Combine lemon zest, lemon juice and garlic in small bowl; set aside.

  3. STEP 3

    Melt 2 tablespoons butter in large sauté pan over medium heat. Add zucchini; cook, stirring occasionally, 10-12 minutes or until softened, lightly browned and moisture has evaporated. Remove from heat. Stir in lemon mixture. Add remaining 1 tablespoon butter; stir until melted and combined. Cool completely.

Zucchini Toast

Top 1 slice toasted sourdough with zucchini butter, a sprinkle of LAND O LAKES® Aged Italian shreds, pinch of chrushed red pepper flakes and drizzle of olive oil.

A microplane makes grating garlic easy.

Tip #2

For best results, store tightly covered in refrigerator and eat within a few days.
