Make-Ahead Breakfast Burritos

Ingredients
1 pound breakfast sausage
1 cup chunky salsa
1 teaspoon garlic salt
3 12 cups (about 80) mini tater tots
20 (6-inch) flour tortillas
1 (8-ounce) package (2 cups) Land O Lakes® Co-Jack® Cheese Chunk, shredded
How to make

STEP 1
Cook sausage in large sauté pan over medium heat 9 minutes or until browned. Remove sausage; set aside. Leave any drippings in pan.

Place salsa in sieve; drain well.

STEP 3
Whisk eggs, drained salsa and garlic salt in medium bowl. Cook tater tots according to package directions until browned and crisp; set aside.

Place tortillas on plate; cover with damp towel. Microwave 30 seconds or until warm and pliable; set aside.

Heat pan with drippings over medium heat. Add egg mixture. Cook, stirring and lifting eggs, 3-5 minutes or until just set. Remove from heat; stir in cooked sausage.

To assemble, sprinkle 1 1/2 tablespoons cheese down center of each warmed tortilla. Spoon 1/4 cup egg mixture over cheese. Top with 4 tater tots. Roll burrito to enclose filling. Wrap each burrito in parchment paper.

Refrigerate burritos up to 3 days or freeze up to 1 month. To reheat, microwave wrapped burrito, in 30-second intervals, 70 seconds or until hot.
