Cheesy BBQ Chicken Grilled Pizza

Ingredients

1 pound pizza dough

1 cup shredded cooked chicken

1/2 cup barbecue sauce, divided

Olive oil, for brushing

1 (8-ounce) package Land O Lakes® Habanero Jack Cheese Chunk, shredded

1/4 cup thinly sliced red onion

1/4 cup sliced pickled jalapeño chile peppers, as desired

2 slices bacon, cooked, diced

1/4 cup Cowboy Butter Ranch Dipping Sauce

Chopped fresh chives, as desired

How to make

  1. STEP 1

    Heat grill to medium-high heat (400°F-425°F).

  2. STEP 2

    Divide dough into two pieces. Stretch each piece into 10-inch round; place onto lightly floured rimless baking sheet. (If dough is resistant, let rest while preparing toppings then reshape before grilling.)

  3. STEP 3

    Combine chicken and 2 tablespoons barbecue sauce in bowl; toss to coat.

  4. STEP 4

    Brush tops of stretched dough with olive oil. Place dough oil-side down onto grill; close cover. Grill 1-3 minutes or until crusts are lightly charred and release easily from grates. Remove from grill; place char-side up onto baking sheet.

  5. STEP 5

    Reduce grill to low heat.

  6. STEP 6

    Spread remaining barbecue sauce over crusts. Sprinkle with half of cheese. Top with chicken mixture, red onion, pickled jalapeños and bacon. Sprinkle with remaining cheese.

  7. STEP 7

    Slide pizzas onto grill; close cover. Grill 2-4 minutes or until cheese is melted and crusts are cooked. Drizzle Cowboy Butter Ranch Dipping Sauce over pizzas. Sprinkle with chopped chives as desired.

Tip #1

For best results, start with a clean grill and oil the grates so the pizzas release easily.

Rainy day option—shape the dough on a parchment-lined baking sheet and bake in a 500°F oven for 10 minutes.

Use any leftover dressing as a dip for fries and chips, tossed with a salad or spread over a burger or chicken sandwich.
