Brown Butter Glazed Pistachio Cookies

Ingredients

Cookies

1 cup Land O Lakes® Butter, softened

3/4 cup granulated sugar

1 large Land O Lakes® Egg

1 3/4 cups (210 grams) all-purpose flour

1/2 teaspoon baking soda

1/2 teaspoon cream of tartar

1 teaspoon vanilla extract

1/4 teaspoon almond extract

1 cup roasted salted pistachios, finely chopped

Glaze

1/2 cup Land O Lakes® Butter

2 cups powdered sugar

1/2 teaspoon vanilla extract

3 to 4 tablespoons milk or water

 

Roasted salted pistachios, finely chopped, as desired for garnish

How to make

  1. STEP 1

    Heat oven to 350°F.

  2. STEP 2

    Combine 1 cup butter and granulated sugar in large bowl. Beat at medium speed, scraping bowl often, until creamy. Add remaining cookie ingredients except pistachios. Beat at medium speed, scraping bowl often, until well combined. Stir in 1 cup pistachios.

  3. STEP 3

    Shape dough into 1-inch balls. Place, 2 inches apart, onto ungreased cookie sheets. Bake 9-10 minutes or until cookies are just beginning to brown around edges. Let stand 5 minutes on cookie sheets. Remove cookies to cooling rack.

  4. STEP 4

    Meanwhile, melt 1/2 cup butter in 1-quart saucepan over medium heat, swirling butter in pan to ensure even cooking. Butter will begin to foam; watch closely. Butter is browned when deep golden brown and milk solids appear in bottom of pan. remove pan from heat. Transfer to heat-proof large bowl, making sure to scrape all brown bits into bowl. Cool just until room temperature but not solid.

  5. STEP 5

    Whisk in remaining glaze ingredients, adding enough milk for desired consistency. Spread glaze over tops of cookies. Sprinkle with additional pistachios as desired. Let stand until glaze is set.

    Tip: Storage Info

    Store cookies in covered container between layers of parchment paper.

Look for roasted, salted pistachios with no shells.

A small food processor makes quick work of finely chopping the pistachios.
