Crab Mixture Ingredients

8 ounces Imitation crabmeat, drained, flaked

2 cups Fresh pea pods or snow peas, cut into 1-inch pieces

1/2 cup Water chestnuts, chopped

2 tablespoons Red bell pepper, chopped

2 tablespoons Green onions, sliced

Dressing Ingredients

1/4 cup Nonfat mayonnaise

1 tablespoon Dijon mustard

1 teaspoon Lemon juice

1 teaspoon Curry powder

Pita Ingredients

4 Whole wheat pita pockets, cut in half

8 Lettuce leaves

4 (3/4-ounce) slices Alpine Lace® Reduced Fat Swiss Cheese Loaf, cut in half

How to make

  1. STEP 1

    Combine Crab Mixture ingredients in large bowl.

  2. STEP 2

    Combine Dressing Ingredients in small bowl; toss with crab mixture.

  3. STEP 3

    Line pita pockets with lettuce leaf. Place 1 half-slice Reduced Fat Swiss Cheese Loaf cheese in each pita pocket. Fill with 1/2 cup salad mixture.

Serve as a plated salad by first placing lettuce leaf onto plate, then topping with salad mixture.
