Ingredients

2 ounces
Chorizo sausage*
6 ounces
Frozen diced potatoes with onion and peppers, slightly thawed
2 each
Eggs, well beaten
2 teaspoons
Green chiles, chopped
1 ounce
Land O Lakes® Extra Melt® Process American Cheese Loaf, Yellow, sliced or shredded
Optional
Sour cream
Optional
Salsa
 
*Can substitute pork sausage

Directions

  1. Cook sausage in large nonstick skillet over medium-high heat until no longer pink(2 to 3 minutes).  Add potatoes; continue cooking, stirring occasionally, until potatoes are tender (3 to 4 minutes).
  2. Prepare 2 eggs according to customer order.
  3. Remove skillet from heat; top with cheese.  Place in salamander until cheese is just melted (30 to 60 seconds).
  4. Serve with sour cream and salsa, if desired.
