Butterscotch Bread

4 cups all-purpose flour

2 cups firmly packed brown sugar

2 cups buttermilk  

2 large Land O Lakes® Eggs

3 tablespoons Land O Lakes® Butter, melted

1 1/2 teaspoons baking powder

1 teaspoon baking soda

1/2 teaspoon salt

1 cup golden raisins

1 cup butterscotch baking chips


 *Substitute 2 tablespoons vinegar or lemon juice and enough milk to equal 2 cups. Let stand 5 minutes.

How to make

  1. STEP 1

    Heat oven to 350°F. Grease bottoms only of two (9x5-inch) loaf pans. Set aside.

  2. STEP 2

    Combine all ingredients except raisins in bowl; beat at low speed, scraping bowl often, until well mixed. Stir in raisins.

  3. STEP 3

    Spoon batter evenly into prepared loaf pans. Bake 40-50 minutes or until toothpick inserted in center comes out clean. Let stand 10 minutes. Remove from pans. Cool completely.
