2 cups all-purpose flour
3/4 cup sugar
1/2 cup Land O Lakes® Butter, softened
2 large Land O Lakes® Eggs
1 tablespoon freshly grated orange zest
1 teaspoon baking soda
1 teaspoon vanilla
1/2 teaspoon salt
1/4 cup orange juice
2 medium (1 cup) ripe bananas, mashed
1 cup sweetened flaked coconut
1 (3.25-ounce) jar (2/3 cup) macadamia nuts, coarsely chopped
*Substitute chopped walnuts.
STEP 1
Heat oven to 350°F. Grease 3 (5 3/4x3-inch) mini loaf pans; set aside.
STEP 2
Combine all ingredients except bananas, orange juice, coconut and nuts in bowl. Beat at low speed, scraping bowl often, until well mixed.
STEP 3
Add bananas and orange juice. Continue beating, scraping bowl often, until well mixed. Stir in coconut and nuts. (Batter will be thick.)
STEP 4
Spread into prepared pans. Bake 35-45 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes; remove from pans. Cool completely.
This bread can also be baked in greased (9x5-inch) loaf pan. Bake 60-65 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes; remove from pan. Cool completely.
