Ingredients

Sauce

1 cup
plain Greek yogurt
1 tablespoon
chopped fresh mint leaves
1 teaspoon
finely chopped fresh garlic
1 teaspoon
freshly grated lemon zest

Beef

2 tablespoons

1 medium (1 cup)
onion, chopped
1 tablespoon
finely chopped fresh garlic
1 teaspoon
ground cumin
1/2 teaspoon
ground allspice
1/4 teaspoon
ground red pepper
1 pound
lean ground beef
2 tablespoons
chopped fresh mint leaves
2 tablespoons
chopped flat leaf parsley
3/4 teaspoon
salt
1/2 teaspoon
pepper
 
8 (6-inch)
wooden skewers

Couscous

1 1/2 cups
couscous
2 tablespoons
Land O Lakes® Butter with Olive Oil & Sea Salt
1/2 teaspoon
salt
2 cups
boiling water
1 tablespoon
chopped flat leaf parsley
1 tablespoon
chopped fresh mint leaves

Directions

  1. Combine all sauce ingredients in bowl; mix well. Cover; refrigerate.
  2. Melt 2 tablespoons Butter with Olive Oil & Sea Salt in skillet over medium heat until sizzling. Add onion and garlic; cook 4-5 minutes or until softened. Add cumin, allspice and red pepper; cook, stirring occasionally, 1 minute. Cool 5 minutes.
  3. Heat oven to 400°F.Line 15x10x1-inch baking pan with aluminum foil; set aside.
  4. Combine cooled onion mixture and all remaining beef ingredients in bowl. Divide into 8 portions; roll each into 4-inch log. Insert wooden skewer into each log. Place onto prepared baking pan. Bake 15-17 minutes or until internal temperature reaches 165°F and meat is no longer pink.
  5. Combine couscous, 2 tablespoons Butter with Olive Oil & Sea Salt and salt in bowl. Pour boiling water over couscous mixture; cover with plastic food wrap. Let stand 5 minutes or until water is absorbed. Fluff with fork; stir in chopped parsley and mint leaves.
  6. Serve couscous with kebabs and sauce.
