This simple macaroon tart recipe is filled with a rich chocolate buttercream filling.

Ingredients

Crust

1 1/2 cups
sweetened flaked coconut
1/4 cup
sugar
2
large Land O Lakes® Eggs (whites only)

Filling

1/4 cup
Land O Lakes® Butter, softened
1 2/3 cups
powdered sugar
2 tablespoons
Land O Lakes® Heavy Whipping Cream
1/4 teaspoon
almond extract
1 tablespoon
light corn syrup
2 (1-ounce) squares
unsweetened baking chocolate, melted, cooled
1/4 cup
sliced almonds, toasted

Directions

  1. Heat oven to 350°F.
  2. Combine coconut, sugar and egg whites in bowl; mix well.
  3. Spray 16 mini muffin pan cups with no-stick cooking spray. Press 1 tablespoon coconut mixture on bottom and up sides of each cup. Place muffin pans onto baking sheet.
  4. Bake 13-16 minutes or until tarts begin to brown. Cool slightly. Remove from pans. Cool completely.
  5. Beat butter in another bowl at medium speed until creamy. Continue beating, gradually adding powdered sugar alternately with whipping cream and almond extract and scraping bowl often, until light and fluffy. Add corn syrup; mix well. Stir in melted chocolate.
  6. Place filling into pastry bag fitted with star tip. Pipe filling evenly into coconut crusts. Garnish with almonds.

I have made these tarts several times and they are always a huge hit. Highly recommend.

I sprayed my tins with a flour spray and the tarts browned nicely and about fell out of the tins. Served them at a Valentine Tea and guests were so impressed that I had made them !!!! will definitely make them again and will share the recipe with Grand daughter who love to bake. Love L.O.L. recipes.

I made the macaroon mixture, putting some of it into sprayed small muffin tin openings and some in small muffin papers in the rest of the openings. I couldn't get the tarts out of either one so didn't complete the recipe by making the filling. They would have been for a women's gathering and I was not willing to see them struggle with the "mess". I might try again making a "birds nest" on a flat cookie sheet, covered with parchment paper, with the macaroon mixture, putting an indentation in the middle and putting the filling in that. My question is, "how did the other reviewers get the tarts out so they could be handled easily"?

The tarts were good, but perhaps a little too sweet for my tastes. I had trouble with the crust sticking to my muffin tin even though I sprayed the tin and it was a non=stick tin. The filling was easy to make.

help! I tried this recipe yesterday but the macaroon stuck to the muffin tin and would not could out. Yes i did spray each muffin tin with Pam, do you have a suggestion as I would like to try and make them today.

These were a hit at a family party, everyone loved them, event the kids. They are surprisingly easy to make but have a great presentation and everyone was impressed!
