1 cup Land O Lakes® Butter, softened
3/4 cup sugar
3/4 cup firmly packed brown sugar
2 large Land O Lakes® Eggs
1 1/2 teaspoons vanilla
2 1/4 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon baking soda
2 1/2 cups sweetened flaked coconut
30 red or green candied cherries, halved
Heat oven to 350°F.
Combine butter, sugar, brown sugar, eggs, and vanilla in large bowl. Beat at medium speed, scraping bowl often, until creamy. Add flour, baking powder, and baking soda. Beat at low speed until well mixed. Stir in coconut.
Drop dough by rounded teaspoonfuls, 2 inches apart, onto ungreased cookie sheets. Press 1 cherry half onto center of each cookie. Bake 9-13 minutes or until edges begin to brown. Remove from cookie sheets.
Proper storing keeps cookies at their best. If you will not be eating your cookies within three days, freeze them. Make sure the cookies are completely cool before placing them in storage containers. Otherwise, they’re likely to stick together. Keep soft or chewy cookies separate from crisp ones.

These are absolutely delicious! I added a 1/4 tsp of sea salt to offset some of the sweetness. I baked them for 10 minutes. They are chewy and so yummy! 💛💛💛
One of, if not the BEST chewy cookie recipes out there. They are a crowd pleaser and keep well in our cookie jar ((but hardly last 2 days!)). Super soft/chewy and the coconut flavor is spot on without any overbearing 'tropical' notes that some people might not like. We occasionally add in mini choc chips and chopped almonds. A must try!! I made this recipe several years ago at Christmas time and loved it. They are moist, chewy and full of coconut flavor. They are now a regualr cookie I bake at Christmas and other times of the year.
The very first time I made this recipe it became a family favorite... my teen daughter, who is not even a huge fan of sweets, said, as she ate one warm from the oven, "they are like a cloud of warm coconutty goodness."
