Ingredients

1/4 cup
Land O Lakes® Butter, softened
1 (8-ounce) package
cream cheese, softened
2/3 cup
sugar
1 pint (2 cups)
Land O Lakes® Heavy Whipping Cream
1/2 cup
sweetened flaked coconut
1/2 teaspoon
coconut flavoring or vanilla
Toasted sweetened flaked coconut, if desired

Directions

  1. Place butter and cream cheese in bowl. Beat at medium speed, scraping bowl often, until creamy. Add sugar; continue beating until well mixed.
  2. Beat at high speed, gradually adding whipping cream, until stiff peaks form. Gently stir in 1/2 cup coconut and coconut flavoring.
  3. Divide mixture evenly among 8 individual serving dishes. Cover; refrigerate until serving time. Sprinkle with toasted coconut, if desired.

Incredible! I doubled this recipe for a very large gathering and served it in 2 oz mini glasses with mini spoons!!!! Everyone loved it. So easy that even I can do it!!! I really believe that it was all done and in the fridge within 30 minutes!!! AND believe me there were a lot of little glases to fill.
