Coconut Mousse

Ingredients

1/4 cup Land O Lakes® Butter softened

1 (8-ounce) package cream cheese, softened

2/3 cup sugar

1 pint (2 cups) Land O Lakes® Heavy Whipping Cream

1/2 cup sweetened flaked coconut

1/2 teaspoon coconut flavoring or vanilla

Toasted sweetened flaked coconut, if desired

How to make

  1. STEP 1

    Place butter and cream cheese in bowl. Beat at medium speed, scraping bowl often, until creamy. Add sugar; continue beating until well mixed.

  2. STEP 2

    Beat at high speed, gradually adding whipping cream, until stiff peaks form. Gently stir in 1/2 cup coconut and coconut flavoring.

  3. STEP 3

    Divide mixture evenly among 8 individual serving dishes. Cover; refrigerate until serving time. Sprinkle with toasted coconut, if desired.

Incredible! I doubled this recipe for a very large gathering and served it in 2 oz mini glasses with mini spoons!!!! Everyone loved it. So easy that even I can do it!!! I really believe that it was all done and in the fridge within 30 minutes!!! AND believe me there were a lot of little glases to fill.
