Coconut Cranberry Bars

Ingredients

Crust

1 1/2 cups all-purpose flour

3/4 cup sugar

3/4 cup cold Land O Lakes® Butter cut into chunks

Topping

2 cups sweetened flaked coconut

1 cup sweetened dried cranberries

3/4 cup firmly packed brown sugar

1/3 cup all-purpose flour

3 large Land O Lakes® Eggs

1 1/2 teaspoons vanilla

1/4 teaspoon salt

How to make

  1. STEP 1

    Heat oven to 350°F.

  2. STEP 2

    Combine 1 1/2 cups flour and sugar in bowl; cut in butter with pastry blender or fork until mixture resembles coarse crumbs. Press onto bottom of ungreased 13x9-inch baking pan. Bake 15 minutes or until edges are lightly browned.

  3. STEP 3

    Combine all filling ingredients in bowl; mix well. Spread over hot, partially baked crust. Continue baking 20-25 minutes or until golden brown. Cool completely. Cut into bars.

I added about three-fourths of a bag of White Chocolate Morsels to mine -- OMG! They were soooo good. That batch was for a church pot-luck. I had to make a second batch (same way) for my family to have, during Christmas. My grandma used to swear by L O' L for her baking, cooking, etc. Somewhere, up there, Granny must be smiling!

I made this today and brought it to a friend's birthday. I poured more vanilla than indicated and it was perfect! Gone in seconds!
