Pita bread is stuffed with hummus and vegetables in this easy sandwich.

Ingredients

1 (10-ounce) container
hummus
3
pita bread rounds, cut in half
2 medium
tomatoes, seeded, cut into 12 slices
1 small
cucumber, cut into 18 slices
3 ounces (3/4 cup)
feta cheese, crumbled
1/3 cup
alfalfa sprouts, if desired
1/3 cups
shredded carrots, if desired

Directions

  1. Spread 3 tablespoons hummus into each pita half. Place 2 slices tomato, 3 slicescucumber and2 tablespoons feta cheese into each sandwich. Add alfalfa sprouts and shredded carrots, if desired.
  2. Wrap each sandwich individually in waxed paper or plastic food wrap; refrigerate until serving time.
