Chocolate Mint Thins

Ingredients

1 cup Land O Lakes® Butter softened

1 1/2 cups sugar

1/2 cup firmly packed brown sugar

1 large Land O Lakes® Egg

1 teaspoon peppermint extract

1 teaspoon vanilla

2 cups all-purpose flour

1/3 cup unsweetened cocoa

1/2 teaspoon baking powder

1/2 teaspoon salt

21 crème de menthe thin candies, unwrapped, cut in half diagonally

How to make

  1. STEP 1

    Heat oven to 350°F.

  2. STEP 2

    Combine butter, 1 cup sugar and brown sugar in bowl. Beat at medium speed, scraping bowl often, until creamy. Add egg, peppermint extract and vanilla. Continue beating until well mixed. Reduce speed to low; add flour, cocoa, baking powder and salt. Beat until well mixed.

  3. STEP 3

    Shape dough into 1-inch balls; roll in remaining sugar to coat. Place 2 inches apart onto ungreased cookie sheets. Bake for 10-13 minutes or until cookies are set.

  4. STEP 4

    Immediately press mint half into center of each cookie. Let stand 2 minutes; remove from cookie sheets. Cool completely.

Tip #1

Chocolate mints will melt slightly after being pressed into the warm cookies, but will set upon cooling.

I make this cookie for Christmas every few years and it's always a goodie! I prefer to cut down on the butter and sugar but the cookie really easy to make and they're delicious!
