Chocolate-Covered Surprise Cookies

3/4 cup sugar

3/4 cup Land O Lakes® Butter softened

1 large Land O Lakes® Egg

1 1/2 teaspoons vanilla

1 3/4 cups all-purpose flour

1/3 cup unsweetened cocoa

1/2 teaspoon baking powder

1 (10-ounce) jar maraschino cherries, drained, reserve juice, halved


1 cup real semi-sweet chocolate chips

2 tablespoons reserved cherry juice

How to make

  1. STEP 1

    Heat oven to 350°F.

  2. STEP 2

    Combine sugar and butter in bowl. Beat at medium speed, scraping bowl often, until creamy. Add egg and vanilla; continue beating until well mixed. Add all remaining cookie ingredients except cherries. Beat at low speed until well mixed.

  3. STEP 3

    Shape dough into 1-inch balls. Place 1 inch apart onto ungreased cookie sheets. Press cherry half into center of each cookie. Bake 8-10 minutes or until set. Cool completely.

  4. STEP 4

    Combine all frosting ingredients in 1-quart saucepan. Cook over low heat, stirring occasionally, 4-5 minutes or until chips are melted and frosting is smooth. Frost cooled cookies.

If you love chocoalate covered cherries, you will love these. They are impressive and a new exciting delicious holiday treat.

This is a fabulous recipe if you love cherries and chocolate together. For best results "season" cookies in covered air tight container for 2-3 days prior to serving-cookies take on more of the cherry flavor by doing this and are more moist.
