Ingredients

Coffee Cake

1 cup sugar

1/2 cup Land O Lakes® Butter, softened

1 cup sour cream

2 large Land O Lakes® Eggs

1 teaspoon vanilla

2 cups all-purpose flour

1 1/2 teaspoons baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 (21-ounce) can cherry pie filling  

Topping

1/4 cup all-purpose flour

1/4 cup sugar

1/4 cup chopped pecans

1 teaspoon ground cinnamon

3 tablespoons Land O Lakes® Butter

 

  *Substitute 1 (21-ounce) can your favorite flavor pie filling.

How to make

  1. STEP 1

    Heat oven to 325°F. Grease and flour 13x9-inch baking pan; set aside.

  2. STEP 2

    Combine 1 cup sugar and 1/2 cup butter in bowl. Beat at medium speed, scraping bowl often, until creamy. Add sour cream, eggs and vanilla; continue beating until well mixed. Add 2 cups flour, baking powder, baking soda and salt; beat at low speed until well mixed.

  3. STEP 3

    Spread half of batter into prepared pan. Spoon cherry pie filling over batter. Spoon remaining batter over pie filling; spread carefully.

  4. STEP 4

    Stir together 1/4 cup flour, 1/4 cup sugar, pecans and cinnamon in bowl. Cut in 3 tablespoons butter until mixture resembles coarse crumbs. Sprinkle crumb mixture over batter. Bake 45-50 minutes until toothpick inserted in center comes out clean and topping is dark golden brown.

Sooooo awesome! Everyone who has tasted it raves about it! Hubby's coworkers ask for this cake regularly. We like it best with apple or blueberry filling. Batter is SUPER thick...I use 2 spoons to spread it (one in each hand). Cake comes out perfect!

Used almond extract instead of vanilla and almonds instead of pecans for the topping. Actually, not too sweet.

I found this recipe years ago, and it's been a hit every single time. One change is that I do use blueberries instead of cherries though.
