1 1/2 cups sugar
1 cup Land O Lakes® Butter, softened
2 large Land O Lakes® Eggs
2 1/2 ounces unsweetened baking chocolate, melted
2 teaspoons vanilla
1 1/2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
3 cups uncooked quick-cooking oats
1 cup semi-sweet chocolate chips
Heat oven to 350°F.
Combine sugar and butter in bowl. Beat at medium speed, scraping bowl often, until creamy. Add eggs, baking chocolate and vanilla; continue beating, scraping bowl often, until well mixed. Add flour, baking powder and salt; beat at low speed until well mixed. Stir in oats and chocolate chips.
Drop dough by rounded tablespoonfuls onto ungreased cookie sheets. Bake 10-12 minutes or until set. (Do not overbake.)
