Ingredients

Cookie

2/3 cup
Land O Lakes® Butter, softened
2/3 cup
firmly packed brown sugar
3/4 cup
dark chocolate baking chips, melted, cooled
1
large Land O Lakes® Egg
1 teaspoon
vanilla
2 cups
all-purpose flour
3 tablespoons
unsweetened cocoa
1/4 teaspoon
salt

Filling

1 1/2 cups
powdered sugar
1/4 cup
Land O Lakes® Butter, softened
1/4 teaspoon
peppermint extract
1 drop
red food color
3 to 4 teaspoons ( )
milk
2 tablespoons
crushed peppermint candies or candy canes

Drizzle

1/3 cup
dark chocolate chips
1/2 teaspoon
vegetable oil

Directions

  1. Heat oven to 350°F.
  2. Combine 2/3 cup butter and brown sugar in bowl; beat at medium speed until creamy. Add melted chocolate, egg and vanilla. Continue beating until well mixed. Add flour, cocoa and salt; beat at low speed until well mixed.
  3. Shape dough into 1-inch balls. Place 2 inches apart onto ungreased cookie sheets. Make indentation in center of each cookie with thumb or back of teaspoon.
  4. Bake 7-9 minutes or until set. Remove to cooling rack. Cool completely.
  5. Combine powdered sugar, 1/4 cup butter, peppermint extract and food color in bowl; beat at medium speed until creamy, adding enough milk for desired spreading consistency. Spoon 1 scant teaspoon filling into each cookie indentation. Immediately sprinkle with crushed candy.
  6. Place 1/3 cup chocolate chips and oil in bowl. Microwave, stirring every 30 seconds, until melted. Spoon into resealable plastic food bag; cut off small corner of bag to create hole. Pipe drizzle over filling.
