Cranberry Cream Cheese Bars

Ingredients

Crust

1/2 cup Land O Lakes® Butter softened

1/2 cup firmly packed brown sugar

1 cup all-purpose flour

1/2 cup uncooked quick-cooking oats

1 teaspoon freshly grated orange zest

1 cup mini semi-sweet chocolate chips

3/4 cup sweetened dried cranberries, chopped

Filling

4 ounces cream cheese, softened

1/2 cup sugar

1/3 cup Land O Lakes® Heavy Whipping Cream

1 teaspoon vanilla

How to make

  1. STEP 1

    Heat oven to 350°F. Spray 8-inch square baking pan with no-stick cooking spray; set aside.

  2. STEP 2

    Combine butter and brown sugar in bowl; beat at medium speed until creamy. Add flour, oats and orange zest; beat at low speed until mixture resembles coarse crumbs. Stir in chocolate chips and cranberries. Reserve 1 cup crumb mixture.

  3. STEP 3

    Firmly press remaining crumb mixture into bottom of prepared pan. Bake 10 minutes.

  4. STEP 4

    Combine cream cheese and sugar in bowl. Beat at medium speed until smooth. Add whipping cream and vanilla, beat until smooth.

  5. STEP 5

    Pour cream cheese mixture evenly over hot, partially baked crust. Sprinkle reserved crumb mixture gently over filling. Continue baking 27-30 minutes or until edges are light golden brown. Cool completely; cut into bars. Store refrigerated.

Tip #1

For additional orange flavor, use orange-flavored sweetened dried cranberries.

The base of this bar is exceptional. However, my filling did not set up good as a 'bar'. It was very soft. Perhaps this is the way it is suppose to be.

This was a big hit with my family tonight! Might even make them next year during the holidays to give away to friends. It's hard not to keep eating them. Love the cranberry, chocolate, oatmeal, cream cheese combo. I didn't use the orange peel this time around and they were still good. Next time I'll try it w/ the orange peel.
