1 1/2 cups uncooked dried rotini pasta
1 tablespoon Land O Lakes® Butter
12 ounces boneless skinless chicken breast, cut into 1-inch pieces
1 small (1/2 cup) onion , chopped
1 teaspoon finely chopped fresh garlic
1 1/2 cups small broccoli florets
1/2 medium (1/2 cup) red bell pepper , cut into thin strips
1/4 teaspoon salt
1/4 teaspoon pepper
1/3 cup milk
6 (3/4-ounce) slices Land O Lakes® Deli American, quartered
Cook pasta according to package directions. Drain; keep warm.
Melt butter in 10-inch skillet until sizzling; add chicken, onion and garlic. Cook over medium heat, turning occasionally, 12-15 minutes or until chicken is lightly browned.
Add broccoli, bell pepper, salt and pepper. Continue cooking 3-5 minutes or until vegetables are crisply tender. Stir in milk and cheese. Cook over medium heat, stirring constantly, 5-6 minutes or until cheese is melted. Stir in cooked pasta.
You can use any medium sized pasta, like elbow macaroni or penne, in this cheesy chicken dish.
