Marinade
1/2 cup vegetable oil
2 tablespoons honey
1 1/2 teaspoons ground cinnamon
1 teaspoon salt
Chicken
4 (4- to 5-ounce) boneless skinless chicken breasts
Maple Butter
1/4 cup Land O Lakes® Butter, softened
2 tablespoons maple syrup
Waffles
8 (3/4-ounce) slices Land O Lakes® Deli American
8 frozen cinnamon toast waffles
*Substitute your favorite frozen waffle.
STEP 1
Combine all marinade ingredients in bowl; set aside.
STEP 2
Cut each chicken breast in half; place into large resealable plastic food bag. Flatten each to about 1/2-inch thickness with meat mallet. Add marinade to bag; seal bag. Gently shake to coat chicken; refrigerate at least 30 minutes.
STEP 3
Combine butter and maple syrup in bowl; mix well. Set aside.
STEP 4
Heat gas grill on medium-high heat or charcoal grill until coals are ash white.
STEP 5
Remove chicken from marinade; discard marinade.
STEP 6
Place chicken onto grill. Grill, turning once, 10-12 minutes or until internal temperature reaches at least 165°F and and chicken is no longer pink in center. Top each chicken piece with 1 slice cheese during last 1-2 minutes of cooking.
STEP 7
Toast waffles. Immediately spread maple butter onto warm waffles. Top each with 1 grilled chicken piece. Cut each chicken-topped waffle into 4 pieces. Skewer each with toothpick.
