Ingredients

Cake

2 tablespoons
Land O Lakes® Butter
3 tablespoons
all-purpose flour
2 tablespoons
sugar
1 tablespoon
dark unsweetened baking cocoa*
1 tablespoon
dark chocolate baking chips
1/2 teaspoon
baking powder
1
large Land O Lakes® Egg (yolk only)
1 tablespoon
water
1 teaspoon
vanilla

Topping

Caramel ice cream topping, if desired
Fudge ice cream topping, if desired
Aerosol whipped cream, if desired
 
*Substitute unsweetened baking chocolate.

Directions

  1. Place butter into large coffee mug; microwave 30-45 seconds or until melted. Add all remaining cake ingredients; mix well with fork.
  2. Microwave 60-90 seconds or until cake pulls away from sides and top is dry. (Do not overcook.) Cool slightly. Top with desired toppings.

Recipe Tips

Coffee mug should be at least 12 ounces.

So easy and good it's dangerous. I made it with and without gluten for different family members and it turned out great. I used a whole egg instead of just the yolk.

Made with the gluten free flour from this site, used coco oil instead of butter, and stevia for sugar, pretty good for a gluten free microwave cake. DO NOT overcook, and voila. Perfect recipe for singles, college kids, or a treat when everyone else is eating gluten.

I am not a microwave cook. I saw this while looking for another recipe and I said cake in a microwave! I have to try this! Hey, for a 90 second microwave cake, it's pretty good. I did 90 seconds and I think I overcooked it by 10 seconds in my microwave. Definitely use the dark chocolate chips and top with toppings. Dulche de Leche ice cream would be perfect sweet and creamy, quick topper.
