Ingredients

1 pint (1)
strawberries*, hulled, halved, mashed slightly
1 cup
sugar
3/4 cup
light corn syrup
 
*Substitute 1 (16-ounce bag frozen strawberries. Increase cooking time of strawberries to 15 minutes.

Directions

  1. Place strawberries in 3-quart saucepan. Cook over medium heat, stirring occasionally, until strawberries come to a full boil (6 to 8 minutes).
  2. Line strainer with cheesecloth; place over large bowl. Pour hot strawberries into strainer mashing with back of spoon to extract juice; discard pulp. Return juice to pan. Add sugar and corn syrup. Cook over medium heat until mixture comes to a full boil (9 to 10 minutes). Boil 1 minute.
  3. Skim foam from top with large metal spoon. Store refrigerated. Serve over pancakes, waffles or desserts.

MIcrowave Directions: Place strawberries in 3-quart casserole. Microwave on HIGH, stirring every 2 minutes, until strawberries come to a full boil (4 to 5 minutes).
