2 cups sugar
1/2 cup Land O Lakes® Butter, softened
1/2 cup buttermilk
2 (1-ounce) squares unsweetened baking chocolate, melted
2 large Land O Lakes® Eggs
2 teaspoons vanilla
2 cups all-purpose flour
2 teaspoons baking soda
1/2 teaspoon salt
1 cup boiling water
Powdered sugar, if desired
*Substitute 1 1/2 teaspoons vinegar plus enough milk to equal 1/2 cup. Let stand 5 minutes.
Heat oven to 350ºF. Grease and flour 13x9-inch baking pan; set aside.
Combine sugar and butter in bowl. Beat at medium speed, scraping bowl often, until creamy. Add buttermilk, melted chocolate, eggs and vanilla. Continue beating until smooth. Add flour, baking soda and salt; beat at low speed until well mixed. Add boiling water; continue beating until smooth.
Pour batter into prepared pan. Bake 40- 45 minutes or until toothpick inserted in center comes out clean. Cool completely.
Dust cake with powdered sugar or serve with dollop of whipped cream, if desired.
The ingredients in this cake can be cut in half to make an 8-inch square snack cake. Follow mixing directions above. Pour batter into prepared 8-inch square pan. Bake 35-40 minutes.

My family love this cake. I used warm water instead of boiling water. If i dont have buttermilk, I will use 1 1/2 teaspon vinegar add enought milk to make 1/2 cup of buttermilk.
