Gingerbread Bars With Orange Frosting

Ingredients

Gingerbread

2/3 cup sugar

1/2 cup Land O Lakes® Margarine softened

1 cup water

2/3 cup light molasses

2 large Land O Lakes® Eggs

3 1/4 cups all-purpose flour

2 teaspoons baking soda

2 teaspoons pumpkin pie spice  

Frosting

4 cups powdered sugar

1/2 cup Land O Lakes® Margarine softened

1/4 cup milk

1 teaspoon freshly grated orange zest

Decorations

Red and green sprinkles, if desired

 

 *Substitute 1 teaspoon ground cinnamon, 1/2 teaspoon ground ginger, 1/4 teaspoon each ground nutmeg and cloves.

How to make

  1. STEP 1

    Heat oven to 350°F. Grease 15x10x1-inch baking pan; set aside.

  2. STEP 2

    Combine sugar and 1/2 cup margarine in bowl. Beat at medium speed, scraping bowl often, until creamy. Add water, molasses and eggs; continue beating until well mixed. Add flour, baking soda and pumpkin pie spice; beat at low speed until well mixed.

  3. STEP 3

    Pour batter into prepared pan. Bake 18-20 minutes or until toothpick inserted in center comes out clean. Cool completely.

  4. STEP 4

    Combine all frosting ingredients except sprinkles in large bowl. Beat at medium speed until creamy. Frost cooled bars. Decorate with sprinkles, if desired.

I used one cup of dark beer instead of the water in the bar recipe. I only used 3 cups of confectioner's sugar for the frosting - and had to add a bit more liquid ( I used orange juice instead of milk) to the frosting as well. They are delicious - just the right balance of spicy and sweet!

I made these bars this morning. It looked just like the picture. The only problem was, it tasted good, but like something was missing. I looked up other recipes, and most have almost the same ingredients, but added "Salt". This ingredient is missing in this recipe. Was it omitted in error? Also...I think 4 cups of the powdered sugar is way too much. Is this an error also? I used 16 oz, which is 1 whole box.
