Ingredients

Salsa

2 medium (1 cup )
seedless oranges, segmented, membrane removed, chopped
1 tablespoon
sugar
2 tablespoons
sliced green onions
2 tablespoons
chopped fresh parsley

Chicken

6 (4-ounce)
boneless skinless chicken breast halves
1/2 teaspoon
salt
1/8 teaspoon
pepper

Glaze

1 cup
orange juice
3 tablespoons
Land O Lakes® Butter
1 tablespoon
cornstarch

Directions

  1. Combine all salsa ingredients in bowl. Cover; refrigerate until serving time.
  2. Heat gas grill on medium or charcoal grill until coals are ash white. Sprinkle chicken breasts with salt and pepper.
  3. Combine all glaze ingredients in 1-quart saucepan. Cook over medium heat, stirring constantly, 5-7 minutes or until mixture thickens and comes to a full boil.
  4. Place chicken on grill; brush with glaze. Grill, turning once and brushing with glaze, 12-15 minutes or until internal temperature of chicken reaches at least 165°F and chicken is no longer pink. Serve with salsa.

My husband, a notorious picky eater, declared this a keeper! Quick, easy and delicious. The orange and scallion flavors make it a perfect summer dish. I did the same as Robin and used drained mandarin oranges, much easier than segmenting and chopping a whole orange.

This easy recipe produces what looks and tastes like a restaurant dish. I used a large can of mandarin oranges and the drained juice from them. The citrus and green onion combination gives the chicken a fresh, light taste. Wonderful dinner!
